Description

These Almond Flour Sugar Cookies are irresistible with their delightful flavor and soft texture. Ideal for decorating, they make any occasion special and memorable.


Ingredients

  • 2 ½ cups super-fine almond flour
  • ⅓ cup coconut flour
  • ½ tsp salt
  • ½ tsp baking soda
  • ½ cup granulated sugar
  • ¼ cup honey
  • ½ cup butter (softened)
  • 2 tbsp coconut oil (solid)
  • 1 large egg (room temperature)
  • 1 tsp vanilla extract
  • ¼ tsp almond extract (optional)
  • 1 cup powdered sugar
  • ½1 Tbsp water
  • Optional: food coloring

Instructions

  • Mix dry ingredients: whisk almond flour, coconut flour, salt, and baking soda in a bowl.
  • Cream butter and coconut oil until smooth and creamy.
  • Add sugar and honey to the mixture, beating until combined.
  • Mix in the egg and extracts until well blended.
  • Gradually add dry ingredients, mixing until a soft dough forms.
  • Rest the dough for 3 minutes to absorb moisture.
  • Divide dough, shape into disks, wrap, and chill for at least one hour.
  • Roll out one disk between parchment papers to ¼-inch thick.
  • Chill rolled dough on a baking sheet for 20-30 minutes.
  • Preheat oven and cut dough into shapes, then bake for 6-10 minutes.
  • Make icing with powdered sugar and water until the right consistency.
  • Cool cookies completely before icing and decorating.

Notes

Chill the dough to ensure clean cut-out shapes and retain form while baking.
For best flavor, ensure butter is softened and avoid over-mixing the dough.
You can use a flax or chia egg to make these cookies vegan.
