- 1 large egg (room temperature)
- 1 tsp vanilla extract
- ¼ tsp almond extract (optional)
- 1 cup powdered sugar
- ½ – 1 Tbsp water
- Optional: food coloring
Instructions
- Mix dry ingredients: whisk almond flour, coconut flour, salt, and baking soda in a bowl.
- Cream butter and coconut oil until smooth and creamy.
- Add sugar and honey to the mixture, beating until combined.
- Mix in the egg and extracts until well blended.
- Gradually add dry ingredients, mixing until a soft dough forms.
- Rest the dough for 3 minutes to absorb moisture.
- Divide dough, shape into disks, wrap, and chill for at least one hour.
- Roll out one disk between parchment papers to ¼-inch thick.
- Chill rolled dough on a baking sheet for 20-30 minutes.
- Preheat oven and cut dough into shapes, then bake for 6-10 minutes.
- Make icing with powdered sugar and water until the right consistency.
- Cool cookies completely before icing and decorating.

Chill the dough to ensure clean cut-out shapes and retain form while baking.
For best flavor, ensure butter is softened and avoid over-mixing the dough.
You can use a flax or chia egg to make these cookies vegan.
