- 2 tablespoons fresh thyme leaves
- 8 ounces phyllo dough
- 8 ounces brie cheese
- 4 small apples, Honeycrisp recommended
- 2 tablespoons light or dark brown sugar
- 2 tablespoons honey
- 1 teaspoon flaky sea salt
Instructions
- Preheat oven to 350°F (177°C) and prepare a baking sheet with parchment paper.
- Melt butter with fresh thyme in a skillet; set aside.
- Layer phyllo dough on the baking sheet, brushing each layer with melted butter.
- Spread brie evenly over the center of the phyllo.
- Slice and toss apples with brown sugar, then arrange on top of brie.
- Fold phyllo edges over the mixture, brush with thyme butter.
- Bake for 40–45 minutes until golden brown.
- Drizzle with honey and sprinkle with sea salt before serving.
