- 2 cups heavy cream cold
- ¾ cup granulated sugar
- 1 vanilla extract
- 2 tablespoon vanilla instant pudding
- ⅔ cup irish cream
- 1 lbs mascarpone cheese room temp
- 27 ladyfingers
- 1 cup espresso
- 2 tablespoon irish cream
- 2 tablespoon cocoa powder
Instructions
- In a large mixing bowl, combine cold heavy cream, sugar, Irish cream, vanilla extract, and vanilla instant pudding. Beat with an electric mixer until soft peaks form.
- Add room-temperature mascarpone cheese and mix until smooth and creamy, being careful not to overmix.
- Prepare a mixture of espresso and additional Irish cream in a shallow bowl. Quickly dip ladyfingers in the mixture for 1-2 seconds and arrange them in an even layer in a 13 by 9-inch baking dish.
- Spread half of the mascarpone mixture over the soaked ladyfingers, smoothing it out with a spatula.
- Layer another set of dipped ladyfingers, followed by a thin spread of the remaining mascarpone cream.
- Use a piping bag fitted with a round tip to create dollops of cream on the thin layer of mascarpone.
- Cover the dish with plastic wrap and refrigerate for a minimum of 4 hours, allowing the flavors to meld and the ladyfingers to soften. Before serving, generously sprinkle cocoa powder on top.
Notes
For best results, refrigerate overnight to enhance the flavors.
