Description

This Baked Cauliflower Cheese is a comforting dish filled with roasted cauliflower and a creamy cheese sauce. Perfect for family gatherings or a cozy meal!


Ingredients

  • Cauliflower florets (2 pounds)
  • Extra virgin olive oil (2 tablespoons)
  • Salt (1/2 teaspoon)
  • Ground black pepper (1/4 teaspoon)
  • Unsalted butter (1/3 cup)
  • All-purpose flour (4 tablespoons)
  • Milk (2 ½ cups)
  • Dijon mustard (1/2 tablespoon)
  • Cheddar cheese (2 cups, grated)
  • Parmesan cheese (1/3 cup, grated)
  • Mozzarella cheese (1 cup, shredded, divided)

Instructions

  • Preheat oven to 375°F (190°C).
  • Toss cauliflower with olive oil, salt, and pepper; roast for 25 minutes until tender.
  • Melt butter in a skillet and whisk in flour until light golden. Gradually add milk and whisk until smooth.
  • Stir in Dijon mustard, cheddar, Parmesan, and mozzarella cheese until creamy.
  • Combine roasted cauliflower with cheese sauce and transfer to a casserole dish.
  • Top with remaining mozzarella and bake for 30 minutes until golden brown.

Notes

For extra flavor, add garlic powder or smoked paprika to the cheese sauce.
Leftovers can be stored in the fridge for up to 3-4 days.
Dairy-free alternatives for butter and cheese can be used.
