- 4 medium sweet potatoes (38 ounces)
- 1/2 tablespoon olive oil
- 1 cup red onion (120 grams)
- 3 cups shredded chicken (12 ounces)
- 1/2 cup + 1 tablespoon BBQ sauce, divided
- 1/3 cup + 1/2 tablespoon mayo
- Salt and pepper to taste
- Optional toppings: fresh cilantro, parsley, green onions, avocado
Instructions
- Preheat oven to 400°F and line a baking sheet with parchment paper.
- Rinse sweet potatoes and poke holes with a fork before baking.
- Bake sweet potatoes for about 50 minutes until soft.
- Sauté onions in olive oil for 3-4 minutes until softened.
- Cut baked sweet potatoes in half and scoop out most of the flesh.
- Mix sweet potato flesh with onions, shredded chicken, half of the BBQ sauce, and mayo in a bowl.
- Fill sweet potato skins with the mixture and bake at 350°F for 20-25 minutes.
- Combine remaining BBQ sauce with mayo for topping.
- Add optional toppings before serving.
Notes
Poke holes in sweet potatoes to prevent bursting.
Allow cooked sweet potatoes to cool before cutting.
Leftovers can be stored in an airtight container for up to 4 days.
