Description

This Beef Burrito features mouthwatering ground beef seasoned to perfection, wrapped in soft tortillas with cheese and fresh toppings. It’s a quick, fulfilling meal perfect for any night!


Ingredients

  • 1 tablespoon canola oil or neutral cooking oil of choice
  • 1 pound lean ground beef
  • 1 ½ teaspoons chili powder
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • ¾ teaspoon kosher salt
  • ½ teaspoon garlic powder
  • ½ teaspoon smoked paprika
  • 1 small yellow or white onion (¼-inch diced)
  • 1 (15-ounce) can reduced-sodium black beans, rinsed and drained
  • 1 cup prepared salsa
  • 6 burrito-size flour tortillas (about 10 inches)
  • 2 cups (8 ounces) shredded Monterey Jack, sharp cheddar, or Mexican blend cheese
  • Sour cream
  • Avocado
  • Hot sauce
  • Chopped fresh cilantro

Instructions

  1. Heat the oil in a large skillet over medium-high heat.
  2. Add the ground beef and press it out to a 1/2-inch thickness. Sizzle for 3 to 4 minutes until a crust forms.
  3. Sprinkle with chili powder, oregano, cumin, salt, garlic powder, and smoked paprika. Add the diced onion.
  4. Break the meat into small pieces and continue cooking until fully cooked, about 4 more minutes.
  5. Stir in the black beans and salsa, cooking for 1 minute until warmed through. Adjust seasoning if needed.
  6. Assemble the burritos by placing a tortilla on a surface and adding cheese, beef/bean mixture, and more cheese down the center.
  7. Fold the sides of the tortilla inwards and roll it up to secure the filling.
  8. In a skillet over medium heat, brown each burrito seam side down for 1 to 2 minutes per side. Serve hot with desired toppings.

Notes

You can use different types of cheese based on your preference.
Feel free to add more toppings such as lettuce or jalapeños for extra flavor.
Leftover filling can be stored in the refrigerator for up to 3 days.
