- Blend the carrots, eggs, vegetable oil, and granulated sugar in a blender on high until smooth, about 60 seconds.
- In a large bowl, whisk together the all-purpose flour, baking powder, and salt.
- Pour the blended mixture into the bowl of dry ingredients and fold until just combined, being careful not to overmix.
- Pour the batter into the prepared 9×13 inch pan and bake for 24-28 minutes or until a toothpick comes out clean from the center.
