- 3 pounds red potatoes
- 2 teaspoons Lawry’s seasoned salt
- 2 teaspoons black pepper
- 2 tablespoons extra virgin olive oil
- 1 pound ground beef
- ½ medium yellow onion, finely diced
- 1 tablespoon hamburger seasoning
- ½ teaspoon Lawry’s seasoned salt
- ½ cup sour cream
- 2 tablespoons ketchup
- 1 tablespoon red wine vinegar
- 2 teaspoons yellow mustard
- ½ teaspoon paprika
- 8 slices thick-cut bacon, cooked crispy, chopped
- 1 cup shredded cheddar cheese
- ¾ cup chopped dill pickles
- ½ cup diced cherry tomatoes
Instructions
- Preheat the oven to 425°F and line a sheet pan with parchment paper.
- Spread cubed red potatoes on the pan, drizzle with olive oil, and season with Lawry’s seasoned salt and black pepper. Roast for 45-60 minutes until golden brown.
- In a skillet, cook ground beef and finely diced onion over medium heat. Season with hamburger seasoning and Lawry’s seasoned salt. Drain excess grease.
- In a bowl, whisk together sour cream, ketchup, red wine vinegar, yellow mustard, and paprika to create the sauce.
- In a large bowl, combine roasted potatoes, beef mixture, crispy bacon, cheddar cheese, pickles, and cherry tomatoes. Pour in the sauce and gently mix.
- Serve warm, garnished with extra cheese, bacon, pickles, and diced tomatoes if desired.
