- ¾ cup Gruyère cheese, shredded, divided

Instructions
- Caramelize the onions in a skillet over medium-low heat until golden brown, about 30-45 minutes.
- Preheat the oven to 400°F (200°C) and prepare an 8×8-inch casserole dish with nonstick spray.
- Melt butter in a saucepan, whisk in flour and salt to make a roux, then add milk to create a cheese sauce with cheddar and Gruyère.
- Layer sliced potatoes in the casserole dish, pour cheese sauce over, and add caramelized onions followed by a topping of reserved cheese.
- Cover with foil and bake for 85-90 minutes, then uncover for 10 more minutes to brown the top.
