- 1 tablespoon dried basil
- 1 tablespoon dried oregano
- 2 bay leaves
- 1/2 cup red wine vinegar
- 1/2 cup olive oil
- 1/4 cup brown sugar
- 1/2 cup green olives (pitted or non-pitted)
- 1/2 cup pitted prunes
- 2 tablespoons capers
- 8 chicken thighs
- salt
- 1/2 cup white wine
- chopped parsley (for garnish)
Instructions
- Peel and chop the garlic, then combine it in a large glass or ceramic bowl with basil, oregano, bay leaves, red wine vinegar, olive oil, and brown sugar.
- Add the green olives, pitted prunes, capers, a pinch of salt, and chicken thighs to the marinade. Mix well to coat the chicken thoroughly.
- Cover the bowl with plastic wrap and refrigerate overnight or for at least 3 hours.
- Preheat the oven to 180C/350F.
- Arrange the chicken along with the marinade in a large baking pan, or use two smaller pans to prevent overcrowding.
- Pour white wine around the chicken, avoiding direct contact to keep the skin crispy.
- Roast in the oven for 50 minutes to 1 hour until fully cooked and golden brown, reaching an internal temperature of 74C/165F.
- Sprinkle with chopped parsley before serving.
