Description

  • 4 boneless, skinless chicken breasts (68 oz each)
  • 2 tbsp olive oil
  • 3 cloves fresh garlic (minced)
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp salt (plus more to taste)
  • 1/2 tsp black pepper (plus more to taste)
  • 4 cups fresh spinach (packed)
  • 8 oz button or cremini mushrooms (sliced)
  • 2 tbsp butter
  • 4 oz cream cheese (softened to room temperature)
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 cup chicken broth

Instructions

  • Preheat the oven to 375°F (190°C) and season chicken breasts with salt, pepper, thyme, oregano, and basil.
  • Sear the chicken in a large skillet with olive oil over medium-high heat for 2-3 minutes per side until golden brown. Set aside.
  • In the same skillet, reduce heat and sauté sliced mushrooms and minced garlic in butter for 5-7 minutes until tender.
  • Add spinach to the skillet, cooking until wilted, about 2-3 minutes.
  • In a bowl, whisk together cream cheese, heavy cream, Parmesan, and chicken broth until smooth. Season with salt and pepper.
  • Layer the mushroom-spinach mixture in a baking dish, place the seared chicken on top, and pour the creamy sauce over.
  • Bake uncovered for 20-25 minutes until chicken reaches an internal temperature of 165°F (74°C). Optional: broil for 2-3 minutes for a golden top.
  • Let rest for 5 minutes before serving.

Notes

Cool leftovers to room temperature before storing in an airtight container for up to 3 days.
For longer storage, freeze the dish for up to 3 months; reheat at 350°F (180°C) for 20 minutes.
Feel free to add sun-dried tomatoes or fresh herbs for additional flavor.
