Description

Ingredients

  • 5 carrots, chopped
  • 5 celery stalks, chopped
  • 1 cup wild rice
  • 3 cups chicken broth
  • 1 lb chicken breasts, cut into small pieces
  • 10 tablespoons butter, divided
  • 1 teaspoon salt
  • 1/2 teaspoon poultry seasoning
  • 4 tablespoons flour
  • 2 cups milk
  • 34 cups sturdy, dry, or day-old bread, cubed
  • Salt, pepper, or fresh parsley (for garnish)

Instructions

  • Preheat oven to 350°F and combine onion, carrots, celery, wild rice, and chicken broth in a baking dish.
  • Cover with foil and bake for 1 hour and 15 minutes.
  • In a saucepan, melt 4 tablespoons butter, add flour, salt, and poultry seasoning, cooking for 1 minute before whisking in milk to form a creamy sauce.
  • Melt remaining butter and toss cubed bread until coated.
  • Add raw chicken to the cooked rice/vegetable mix and pour in the creamy sauce, stirring to combine.
  • Top with butter-coated bread cubes and bake uncovered at 450°F for 20-30 minutes or until chicken is cooked and bread is golden.
  • Garnish with salt, pepper, and fresh parsley before serving.

Notes

For a gluten-free version, substitute flour with cornstarch and use gluten-free bread.
Feel free to add other vegetables such as mushrooms or spinach for extra nutrition.
