- 5 carrots, chopped
- 5 celery stalks, chopped
- 1 cup wild rice
- 3 cups chicken broth
- 1 lb chicken breasts, cut into small pieces
- 10 tablespoons butter, divided
- 1 teaspoon salt
- 1/2 teaspoon poultry seasoning
- 4 tablespoons flour
- 2 cups milk
- 3–4 cups sturdy, dry, or day-old bread, cubed
- Salt, pepper, or fresh parsley (for garnish)
Instructions
- Preheat oven to 350°F and combine onion, carrots, celery, wild rice, and chicken broth in a baking dish.
- Cover with foil and bake for 1 hour and 15 minutes.
- In a saucepan, melt 4 tablespoons butter, add flour, salt, and poultry seasoning, cooking for 1 minute before whisking in milk to form a creamy sauce.
- Melt remaining butter and toss cubed bread until coated.
- Add raw chicken to the cooked rice/vegetable mix and pour in the creamy sauce, stirring to combine.
- Top with butter-coated bread cubes and bake uncovered at 450°F for 20-30 minutes or until chicken is cooked and bread is golden.
- Garnish with salt, pepper, and fresh parsley before serving.
Notes
For a gluten-free version, substitute flour with cornstarch and use gluten-free bread.
