- 2 tablespoons extra virgin olive oil
- 2 tablespoons fresh lemon juice
- 1 1/2 teaspoons dijon mustard
- 1 teaspoon honey
- 1/4 teaspoon garlic powder
- 1/2 teaspoon kosher salt
- Black pepper to taste
- 1 (14 ounce) can chickpeas (drained and rinsed)
- 1 cup diced Persian or English cucumber
- 1 cup cherry tomatoes (halved)
- 1 yellow bell pepper (diced)
- 1/4 cup diced red onion
- 1/4 cup chopped flat leaf parsley
- 2 tablespoons chopped dill
- 4 ounces feta (cut into cubes)
Instructions
- In a jar with a lid, combine all the ingredients for the lemon vinaigrette. Shake or whisk until well combined.
- In a large mixing bowl, add the chickpeas, cucumber, tomatoes, bell pepper, red onion, and herbs. Pour in the vinaigrette and mix well.
- Gently fold in the cubes of feta and season to taste. Serve immediately.
