Description

Chili Lime Roasted Cauliflower brings a delightful burst of flavor to your table. With minimal prep and enticing ingredients, this dish is perfect for a quick, healthy meal. Enjoy the spicy kick and fresh lime in every bite!


Ingredients

Scale
  • 1 large head cauliflower , cut into florets
  • 2 garlic cloves , minced
  • 2.5 tbsp extra virgin olive oil
  • 1.5 tsp chipotle powder (more or less for spiciness!)
  • 3/4 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp lime juice (1 medium to large lime)
  • 1 tbsp coriander/cilantro leaves , finely chopped (optional, sub parsley or chives)

Instructions

  • Preheat the oven to 200°C/390°F.
  • In a large bowl, add the cauliflower florets. Drizzle with olive oil and sprinkle with minced garlic. Use your hands to combine and coat the cauliflower in the oil.
  • Sprinkle the chipotle powder, salt, and black pepper over the cauliflower. Toss well to ensure even coating.
  • Spread the seasoned cauliflower on a tray. Bake for 25 minutes, tossing once halfway through, until the edges are caramelized and the cauliflower is tender.
  • Remove the tray from the oven. Gather the cauliflower together and drizzle with lime juice.
  • Sprinkle with finely chopped coriander (or parsley/chives) and serve immediately.

Notes

Adjust the amount of chipotle powder based on your spice preference.
Feel free to top with additional lime juice for extra zest!
This dish pairs well with grilled meats or can be served as a stand-alone side.
