These Chocolate Raspberry Truffles are the perfect sweet treat, featuring a luscious raspberry filling enveloped in creamy chocolate. They’re simple to make and sure to impress at any gathering!
Ingredients

- 1 1/3 cup Frozen raspberries
- 1/4 cup Powdered sugar
- 1/4 cup Heavy whipping cream
- 7 oz Good quality white chocolate
- 1 TBSP Water
- 7 oz Dark chocolate (52% to 70% cocoa)
- Pink chocolate or ruby chocolate/candy melts (optional)
Instructions
- Defrost the raspberries and set aside.
- Finely chop the white chocolate and place in a bowl.
- Blend raspberries into a silky puree, adding water if needed.
- Strain the puree to remove seeds.
- Cook the strained puree with powdered sugar until boiling, then simmer and reduce.
- Add heavy cream to the raspberry mixture, blending well.
- Pour the mixture over chopped white chocolate and stir until smooth.
- Chill the ganache for around 2 hours until firm.
- Scoop and roll the ganache into truffle-sized balls.
- Melt the dark chocolate and coat each truffle.
- Allow coated truffles to chill and set in the fridge.
Notes
Ensure the raspberry puree is thick enough to avoid soggy truffles.
Use high-quality chocolate for the best flavor.
Chill the coated truffles properly for an optimal texture.
