- 6 ounces bacon, cut into 1 inch pieces
- 1 pound pork sausage
- 2 large potatoes, peeled and cut into bite sized pieces
- 2 large onions, sliced
- 3 cups beef broth (or chicken broth)
- salt and pepper to taste
- 2 tablespoons parsley, chopped
Instructions
- Cook the bacon in a large saucepan until crispy and set aside, reserving 2 tablespoons of the grease.
- Add the sausage to the pan and brown on all sides before removing it from the pan.
- Sauté the sliced onions in the same pan until they are tender and fragrant.
- Layer the chopped potatoes over the onions, then return the bacon and sausage to the pot.
- Pour in the broth, bringing the mixture to a boil before reducing the heat, covering, and simmering for 2 hours.
- Season with salt and pepper, then sprinkle with chopped parsley before serving.
Notes
For extra flavor, try using smoked sausage.
This stew tastes even better the next day as the flavors meld together.
Serve with crusty bread for a delicious meal.
