Description

These Cottage Cheese Brownies blend rich chocolate with creamy cottage cheese, resulting in a fudgy treat that’s both nostalgic and healthy. Perfect for any occasion!


Ingredients

  • 1 tsp coconut oil
  • 1 cup semi-sweet chocolate chips
  • 3 large eggs
  • 1 cup granulated sugar
  • 1 cup cottage cheese
  • 1 tbsp milk
  • 1 tsp pure vanilla extract
  • 1 cup almond flour
  • ¼ tsp salt

Instructions

  • Preheat oven to 350° F and line an 8×8 baking dish with parchment paper.
  • Melt butter, coconut oil, and chocolate chips in a saucepan over low heat, stirring until smooth.
  • In a bowl, whisk together eggs and sugar until frothy, then mix in melted chocolate.
  • Blend cottage cheese and milk in a food processor until smooth, then fold into the mixture.
  • Gently mix in vanilla, almond flour, and salt until just combined.
  • Pour batter into prepared pan and bake for 35-40 minutes until edges are golden.
  • Cool completely before lifting brownies out using the parchment paper.

Notes

Use room temperature eggs for better blending.
For enhanced flavor, add a pinch of instant coffee or espresso powder.
