Description

Creamy Baked Chicken Orzo combines golden-brown chicken and tender orzo pasta in a rich sauce. Ideal for cozy dinners, this simple yet flavorful dish is sure to please everyone at the table.

  • 1.5 pounds Boneless Skinless Chicken Breasts
  • 2 tablespoons Olive Oil
  • 1 teaspoon Italian Seasoning
  • 1 teaspoon Onion Powder
  • 1/2 teaspoon Black Pepper
  • 1 teaspoon Sea Salt
  • 1 cup Uncooked Orzo
  • 4 cups Chicken Broth
  • 3 Garlic Cloves, minced
  • 1 cup Cherry Tomatoes, halved
  • 8 ounces Cream Cheese, softened
  • 4 cups Fresh Baby Spinach
  • 1/2 cup Parmesan Cheese, grated
  • 1/2 cup Heavy Cream

Instructions

  • Preheat oven to 400°F (200°C) and grease a 9×13-inch baking dish.
  • In a bowl, mix cubed chicken with olive oil, Italian seasoning, onion powder, sea salt, and pepper.
  • Spread the seasoned chicken evenly in the baking dish, then sprinkle uncooked orzo and minced garlic on top.
  • Pour chicken broth over the mixture and stir gently.
  • Add cherry tomatoes and dot with cream cheese.
  • Cover with foil and bake for about 25 minutes, until chicken is cooked and orzo is tender.
  • Stir in spinach and Parmesan, then bake uncovered for another 10-15 minutes until bubbly.
  • Optionally, drizzle with heavy cream before serving.

Notes

Store leftovers in an airtight container for up to 3 days in the refrigerator.
Can freeze for up to 3 months; reheat in the oven at 350°F (175°C).
For a crispy top, broil for the last 1-2 minutes.
