- 1.5 pounds Boneless Skinless Chicken Breasts
- 2 tablespoons Olive Oil
- 1 teaspoon Italian Seasoning
- 1 teaspoon Onion Powder
- 1/2 teaspoon Black Pepper
- 1 teaspoon Sea Salt
- 1 cup Uncooked Orzo
- 4 cups Chicken Broth
- 3 Garlic Cloves, minced
- 1 cup Cherry Tomatoes, halved
- 8 ounces Cream Cheese, softened
- 4 cups Fresh Baby Spinach
- 1/2 cup Parmesan Cheese, grated
- 1/2 cup Heavy Cream
Instructions
- Preheat oven to 400°F (200°C) and grease a 9×13-inch baking dish.
- In a bowl, mix cubed chicken with olive oil, Italian seasoning, onion powder, sea salt, and pepper.
- Spread the seasoned chicken evenly in the baking dish, then sprinkle uncooked orzo and minced garlic on top.
- Pour chicken broth over the mixture and stir gently.
- Add cherry tomatoes and dot with cream cheese.
- Cover with foil and bake for about 25 minutes, until chicken is cooked and orzo is tender.
- Stir in spinach and Parmesan, then bake uncovered for another 10-15 minutes until bubbly.
- Optionally, drizzle with heavy cream before serving.
Notes
Store leftovers in an airtight container for up to 3 days in the refrigerator.
Can freeze for up to 3 months; reheat in the oven at 350°F (175°C).
For a crispy top, broil for the last 1-2 minutes.
