Description

This Creamy Lemon Orzo with Salmon combines comfort and elegance, featuring tender salmon and creamy orzo with bright notes of lemon and garlic; perfect for any occasion.

Ingredients

Scale
  • 2 tablespoons extra virgin olive oil, divided
  • 2 tablespoons freshly squeezed lemon juice
  • 1 teaspoon Dijon mustard
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 3 skinless salmon filets (about 6 ounces each)
  • 2 tablespoons unsalted butter
  • ½ medium yellow onion, diced
  • 1 tablespoon garlic, minced
  • 1 cup orzo, uncooked
  • 2 cups chicken broth
  • 1 cup heavy whipping cream
  • ½ cup grated Parmesan cheese
  • Chopped fresh parsley, for garnish

Instructions

  • Whisk the marinade ingredients together and let the salmon marinate for 10 minutes.
  • Heat olive oil in a skillet and sear the salmon for 3-4 minutes on each side until cooked through.
  • In another skillet, melt butter with olive oil, then sauté diced onion until soft.
  • Add minced garlic and orzo, toasting lightly for 2-3 minutes.
  • Pour in chicken broth, heavy cream, and lemon juice; let the mixture simmer and thicken for 8-10 minutes.
  • Stir in Parmesan cheese until melted and smooth, adjusting consistency if needed.
  • Plate the creamy orzo and top with seared salmon; garnish with parsley.

Notes

For a gluten-free version, substitute orzo with gluten-free pasta.
Allow the salmon to marinate longer for enhanced flavor, up to 20 minutes.
Monitor the orzo closely to prevent overcooking.
