Ingredients

- Pasta Water (⅓ cup + more if needed)
- Pumpkin Puree (1 cup)
- Cream Cheese (½ cup)
- Parmesan (¼ cup, plus more to serve)
- Dried Sage (½ teaspoon)
- Dried Thyme (¼ teaspoon)
- Cayenne Pepper (¼ teaspoon, optional)
- Salt (½ teaspoon, or to taste)
Instructions
- Boil a large pot of salted water and cook the pasta according to package instructions until al dente.
- Reserve about a cup of pasta water before draining the pasta.
- In a skillet, heat olive oil and sauté minced garlic for 2-3 minutes until fragrant.
- Add reserved pasta water, pumpkin puree, cream cheese, parmesan, and herbs to the skillet and stir until creamy.
- Combine the drained pasta with the sauce in the skillet, adding more pasta water if needed for desired consistency.
