Description

Ingredients

  • 1 tablespoon olive oil
  • 8 oz mushrooms (crimini)
  • Salt and pepper
  • 16 oz potato gnocchi
  • ½ cup chicken broth
  • 1 cup heavy cream
  • 4 cloves garlic (minced)
  • ½ teaspoon Italian seasoning
  • ½ teaspoon smoked paprika
  • 5 oz fresh spinach
  • ¼ teaspoon salt (to taste)
  • Coarsely ground black pepper (to taste)
  • Red pepper flakes (to taste)

Instructions

  • Heat olive oil in a skillet over medium-high heat and sauté the crimini mushrooms for 1-2 minutes until golden.
  • Add gnocchi, chicken broth, heavy cream, garlic, Italian seasoning, smoked paprika, and salt to the skillet. Bring to a gentle boil.
  • Cover and cook the gnocchi for about 5 minutes, allowing the flavors to meld and the sauce to thicken.
  • Stir in fresh spinach and cook for an additional 5 minutes until wilted.
  • Adjust seasoning with salt, pepper, and red pepper flakes to taste.
  • Top with reserved sautéed mushrooms and serve warm.

Notes

Store leftovers in an airtight container for up to 3 days or freeze for up to 3 months.
For a lighter version, substitute heavy cream with half-and-half or coconut cream.
Feel free to use seasonal vegetables instead of mushrooms, like zucchini or bell peppers.
