- 4 salmon fillets (about 4–6 ounces each)
- 2 tablespoons olive oil
- 2 teaspoons Tuscan spice blend
- 1 teaspoon sea salt
- 1 tablespoon olive oil (or 1–2 tablespoons butter)
- 4 garlic cloves, minced or 1 shallot
- 3 tablespoons tomato paste
- 5–6 sun-dried tomatoes, chopped
- 1–2 tablespoons Tuscan spice blend
- Sea salt, to taste
- 1 ½ cups heavy cream
- 1 cup vegetable or seafood stock
- 3 tablespoons white cooking wine
- Juice of ½ lemon
- 1 cup fresh kale, chopped
- 1 cup parmesan cheese, freshly grated
Instructions
- Preheat oven to 400°F (200°C) and prepare a baking sheet with parchment paper.
- Pat the salmon fillets dry, drizzle with olive oil, and season with Tuscan spice blend and sea salt.
- Roast the salmon for 15–20 minutes until opaque and flakes easily with a fork.
- In a skillet, heat olive oil (or butter) and sauté garlic until fragrant and golden.
- Stir in the Tuscan spice blend, tomato paste, and sun-dried tomatoes, cooking for another minute.
- Lower heat, add heavy cream, stock, white wine, and lemon juice; let bubble gently for 1–2 minutes.
- Whisk in parmesan cheese until melted, then fold in chopped kale until wilted.
- Carefully add the roasted salmon to the sauce, spooning the mixture over it and simmering for 5–6 minutes.
- Serve with your favorite sides and garnish with extra parmesan.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheat on the stovetop or microwave; add a splash of cream to restore texture if needed.
