Ingredients

  • 4 salmon fillets (about 46 ounces each)
  • 2 tablespoons olive oil
  • 2 teaspoons Tuscan spice blend
  • 1 teaspoon sea salt
  • 1 tablespoon olive oil (or 12 tablespoons butter)
  • 4 garlic cloves, minced or 1 shallot
  • 3 tablespoons tomato paste
  • 56 sun-dried tomatoes, chopped
  • 12 tablespoons Tuscan spice blend
  • Sea salt, to taste
  • 1 ½ cups heavy cream
  • 1 cup vegetable or seafood stock
  • 3 tablespoons white cooking wine
  • Juice of ½ lemon
  • 1 cup fresh kale, chopped
  • 1 cup parmesan cheese, freshly grated

Instructions

  • Preheat oven to 400°F (200°C) and prepare a baking sheet with parchment paper.
  • Pat the salmon fillets dry, drizzle with olive oil, and season with Tuscan spice blend and sea salt.
  • Roast the salmon for 15–20 minutes until opaque and flakes easily with a fork.
  • In a skillet, heat olive oil (or butter) and sauté garlic until fragrant and golden.
  • Stir in the Tuscan spice blend, tomato paste, and sun-dried tomatoes, cooking for another minute.
  • Lower heat, add heavy cream, stock, white wine, and lemon juice; let bubble gently for 1–2 minutes.
  • Whisk in parmesan cheese until melted, then fold in chopped kale until wilted.
  • Carefully add the roasted salmon to the sauce, spooning the mixture over it and simmering for 5–6 minutes.
  • Serve with your favorite sides and garnish with extra parmesan.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheat on the stovetop or microwave; add a splash of cream to restore texture if needed.
