Description

Experience the irresistible flavor of Crispy Black Bean Quesadillas. With savory black beans, melty cheese, and a crunchy exterior, these are perfect for quick meals any day!


Ingredients

  • 1 15 oz can black beans
  • 1 cup shredded cheddar cheese
  • ½ cup salsa
  • ½ tsp chili powder
  • 6 medium flour tortillas
  • Cooking spray or a little butter/oil for brushing

Instructions

  • Preheat oven to 425°F (220°C) and prepare a baking sheet with parchment paper.
  • Mash half of the black beans in a bowl, then mix in the remaining beans, cheese, salsa, and chili powder.
  • Spread the bean mixture on 3 tortillas and cover with the remaining tortillas.
  • Brush tops with oil or melted butter, and bake for 15-17 minutes until golden and crispy.
  • Cool for a minute, slice into wedges, and serve with sour cream, guacamole, or extra salsa.

Notes

Store unused quesadillas in an airtight container for up to 3 days in the refrigerator.
Freeze tightly wrapped quesadillas for up to 3 months. Reheat in the oven for best results.
Customize fillings with additional vegetables or proteins for a personal touch.
