- 1 15 oz can black beans
- 1 cup shredded cheddar cheese
- ½ cup salsa
- ½ tsp chili powder
- 6 medium flour tortillas
- Cooking spray or a little butter/oil for brushing
Instructions
- Preheat oven to 425°F (220°C) and prepare a baking sheet with parchment paper.
- Mash half of the black beans in a bowl, then mix in the remaining beans, cheese, salsa, and chili powder.
- Spread the bean mixture on 3 tortillas and cover with the remaining tortillas.
- Brush tops with oil or melted butter, and bake for 15-17 minutes until golden and crispy.
- Cool for a minute, slice into wedges, and serve with sour cream, guacamole, or extra salsa.
Notes
Store unused quesadillas in an airtight container for up to 3 days in the refrigerator.
Freeze tightly wrapped quesadillas for up to 3 months. Reheat in the oven for best results.
