- 4 cabbage steaks
- 1/3 cup olive oil
- 1 1/2 tsp. minced garlic
- 1/4 tsp. salt
- 1/2 tsp. pepper
- 1 tsp. smoked paprika
- 1 1/2 cups grated parmigiano reggiano cheese
- 1 tbsp. balsamic vinegar
- 1 tbsp. chopped parsley
Instructions
- Preheat your oven to 425°F and prepare a baking sheet with parchment paper. Wash and slice the cabbage in half vertically. Cut ‘steaks’ from one half, about 1 inch thick, ensuring they remain intact by including the stem.
- In a bowl, mix olive oil, 1/3 cup of grated Parmesan, minced garlic, salt, pepper, and smoked paprika. Brush this mixture on both sides of the cabbage steaks.
- For each steak, create small piles of the remaining grated Parmesan on the baking sheet (roughly 1/3 cup each). Place each cabbage steak on its cheese pile. Roast them in the oven for 20-25 minutes until the cheese turns golden and crispy.
- Once done, drizzle balsamic vinegar over the steaks and sprinkle with fresh parsley. Serve immediately.
Notes
For extra flavor, add a pinch of chili flakes to the olive oil mixture.
Using fresh parsley adds brightness to the dish; feel free to substitute with other herbs like basil or oregano.
