- ½ cup unsalted butter, melted
- 2 teaspoons garlic powder
- 1 teaspoon kosher salt, plus more to taste
- ½ teaspoon black pepper
- ½ cup Parmesan cheese, grated
- ¼ cup Gruyere cheese, finely shredded
- 5 medium sweet potatoes, about 3 pounds
- 2 tablespoons fresh herbs, such as rosemary, optional
Instructions
- Preheat oven to 400°F and prepare a muffin tin with cooking spray.
- Whisk melted butter, garlic powder, kosher salt, and black pepper in a bowl.
- Stir in Parmesan and Gruyere cheese until combined.
- Coat sweet potato slices in the butter mixture until fully covered.
- Stack coated slices in muffin cups, filling just above the rim.
- Cover with foil and bake for 30 minutes; then remove foil and bake for another 30-35 minutes until golden and crispy.
- Cool for 5 minutes, then release stacks and serve warm.
Notes
Use a mandolin slicer for uniformly thin slices of sweet potatoes.
Allow the butter to cool slightly before mixing it in to prevent cheese melting prematurely.
Store leftovers in an airtight container for up to 4 days in the fridge.
