  • ½ cup diced onion
  • 12 slices bacon cooked and crumbled, divided
  • 1 14.5-ounce can diced tomatoes, drained
  • 1 1/2 cups beef broth
  • 1 cup tomato sauce
  • 1 tablespoon yellow mustard
  • 20 ounces refrigerated cheese tortellini
  • 1½ cups shredded cheddar cheese

Instructions

  1. In a slow cooker, combine ground beef, diced onion, salt, pepper, garlic powder, paprika, half of the crumbled bacon, and the drained diced tomatoes.
  2. Add beef broth, tomato sauce, and mustard, mixing until well combined.

  4. Stir in cheese tortellini, ensuring they are mostly submerged in sauce.
  5. Cook for an additional 30–40 minutes until tortellini are tender.
  6. Add shredded cheddar cheese, stirring until melted and creamy.
  7. Top with remaining bacon and let sit for 5 minutes before serving to thicken the sauce.

Notes

Feel free to use turkey or chicken instead of ground beef for a lighter option.
The dish can be topped with fresh herbs like parsley for added flavor.
