Description

Ingredients

  • 1 lb lean ground beef
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 4 cups beef broth
  • 2 medium russet potatoes, diced
  • 10.5 oz can cheddar cheese soup
  • 1 cup heavy whipping cream
  • 1 cup freshly grated cheddar cheese
  • Optional toppings: Pickle slices, diced tomatoes, or more cheese

Instructions

  • Cook the bacon strips in a skillet until crisp, then chop for topping.
  • Brown the ground beef with onions, garlic, salt, and pepper in the same skillet.
  • Transfer the beef mixture to a crockpot and add beef broth, potatoes, and cheese soup; stir well.
  • Cook on low for 6–8 hours or high for 4 hours.
