  • 1 pound ground Italian sausage
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 medium carrots, peeled and thinly sliced
  • 4 cups chicken broth
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 packet (19-ounce) frozen cheese tortellini
  • 1½ cups heavy cream
  • 2 cups fresh baby spinach leaves
  • 1 cup shredded Parmesan cheese
  • Parsley for garnish

Instructions

  • Brown the sausage in a skillet and transfer to the slow cooker.
  • Add diced onion, minced garlic, and sliced carrots to the slow cooker and stir.
  • Pour chicken broth over the mixture and season with Italian seasoning, salt, and pepper.
  • Cook on LOW for 6-7 hours or HIGH for 3-4 hours until carrots are tender.
  • Stir in frozen tortellini 30 minutes before serving.
