This Crockpot Shrimp Boil combines juicy shrimp, smoky sausage, tender potatoes, and sweet corn for a flavorful dish that’s perfect for gatherings and easy weeknight meals.

- 1.5 lb red skinned potatoes
- 2 ropes andouille sausage
- 3–4 sweet corn on the cob
- 1 onion
- 5 garlic cloves
- 4 cups chicken broth
- 1–2 cups water
- 2 tablespoons Old Bay seasoning
- 2 tablespoons Creole/Cajun seasoning
- 2 lbs raw jumbo shrimp
- 1 lemon
- Chopped parsley
Instructions
- Layer the red skinned potatoes at the bottom of the crockpot.
- Add the sliced andouille sausage, cut corn, sliced onion, and minced garlic on top.
- Pour in chicken broth and enough water to submerge the ingredients; stir in Old Bay and Cajun seasoning.
- Cook on low for 5-6 hours or high for 3-4 hours until potatoes are fork-tender.
- In the last 30-60 minutes, stir in thawed raw shrimp.
- Just before serving, squeeze fresh lemon juice over and sprinkle with chopped parsley.
Notes
Cut potatoes evenly to ensure uniform cooking time.
