- 1/2 cup butter salted or unsalted, softened
- 1/2 cup brown sugar light
- 1 egg at room temperature
- 2 tsp butter vanilla emulsion or vanilla extract
- 1/2 tsp baking soda
- 1 & 1/3 cup flour
- 1/4 tsp salt
- 2/3 cup white chocolate chips
- 1/2 cup lucky charms marshmallows optional but highly recommended
- 4 oz cream cheese softened
- 2 tbsp butter softened
- 3 tbsp marshmallow cream
- 1/2 cup powdered sugar
- 1/2 tsp vanilla extract
Instructions
- Preheat the oven to 350F and line a baking sheet with parchment paper.
- Cream the softened butter and brown sugar together until light and fluffy.
- Mix in one egg and the vanilla butter emulsion.
- Add in the flour, salt, and baking soda, mixing until combined. Stop mixing as soon as the flour mixture is no longer visible to avoid overmixing. Fold in the white chocolate chips and Lucky charms marshmallows.
- Using a large cookie scooper, scoop out 8 large cookie dough balls, place them on the prepared baking sheet, flatten them to about 1 inch thick, and bake for 11-12 minutes.
- Let the cookies cool on the baking sheet for 20-30 minutes before transferring them to a cooling rack.
Notes
For best results, ensure the butter and cream cheese are at room temperature for easier mixing.
These cookies can be stored in an airtight container at room temperature for up to a week.
Feel free to add more Lucky charms marshmallows for an extra sweet touch.
