Description

These Decadent Cottage Cheese Date Brownies combine the rich flavors of chocolate and dates for a treat that’s both healthy and indulgent. With a creamy cottage cheese base and chocolate chips throughout, these brownies are a simple yet satisfying dessert everyone will love!

Ingredients

Scale
  • 10 dates (soaked in hot water for 10 minutes to soften)
  • 1/2 cup almond flour
  • 4 tbsp chocolate protein powder (i use optimum nutrition gold standard)
  • 2 tbsp cocoa powder
  • 2 1/2 tbsp maple syrup
  • 1 tsp vanilla
  • 1/8 teaspoon salt
  • 1 cup cottage cheese (good culture brand provides the best thick texture)
  • 1/2 cup vanilla protein powder
  • 1 1/4 cups almond flour (i always use king arthur for a finer crumb)
  • 2 1/2 tbsp maple syrup
  • 2 tbsp cashew butter
  • 1 1/2 tsp vanilla
  • 1/3 cup mini chocolate chips (i prefer enjoy life for their clean ingredients)

Instructions

  • Soak 10 dates in hot water for 10 minutes until soft, then drain them.
  • In a food processor, blend the softened dates with chocolate protein powder, cocoa powder, maple syrup, vanilla, and salt until smooth to create the brownie base.
  • In a large bowl, mix cottage cheese, vanilla protein powder, almond flour, cashew butter, remaining maple syrup, and vanilla until smooth, about 2-3 minutes. Fold in mini chocolate chips gently.
  • Line an 8×8 inch baking dish with parchment paper. Press the date-chocolate mixture evenly at the bottom. Spread the cottage cheese mixture on top evenly.
  • Freeze the assembled dish for at least 1 hour until firm. Lift the block using parchment paper and cut into squares. Serve frozen or let sit at room temperature for 5 minutes before enjoying.

Notes

For softer brownies, make sure to fully soak the dates.
Use a sharp knife and dip it in hot water for cleaner cuts when slicing the brownies.
These brownies can be stored in the freezer for a longer shelf life.
