Description

These Easter Sugar Cookies are irresistibly sweet and easy to make, perfect for spring celebrations. With a delightful royal icing finish, they’re great for gifting or enjoying at family gatherings.


Ingredients

  • 1/2 cup unsalted butter, softened to room temperature
  • 1 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 cups all-purpose flour
  • 3 cups confectioners' sugar
  • 2 tablespoons meringue powder
  • 1/4 cup room temperature water
  • 1/2 teaspoon vanilla extract
  • gel food colouring

Instructions

  1. In a large mixing bowl, cream the butter and sugar using a hand mixer on medium speed until light and fluffy, about 2 minutes.
  2. Add the egg and vanilla extract, beating until well combined.
  3. Switch the mixer to low speed and incorporate the baking powder and salt.
  4. Gradually add the all-purpose flour, mixing until the dough comes together.
  5. Shape the dough into a ball and wrap it tightly in plastic wrap.
  6. Freeze for 30 minutes or refrigerate until firm (at least 1 hour or up to overnight).
  7. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  8. Let the chilled dough sit at room temperature for 5-10 minutes.
  9. On a floured surface, roll out the dough to 1/4-inch thick and cut out egg shapes using a cookie cutter.
  10. Place the cookies on the prepared baking sheet, spacing them one inch apart.
  11. Re-roll any dough scraps and cut out additional cookies.
  12. Bake for 8-10 minutes, until the edges start to turn golden brown. Let cool for a few minutes before transferring to a wire rack.

Notes

Make sure to use room temperature butter for easier mixing.
You can customize your royal icing with different gel food colors for decoration.
Store the cookies in an airtight container to keep them fresh.
