Description

Ingredients

  • 500 g chicken breast fillets
  • 3 tablespoons vegetable oil
  • 2 tablespoons Sriracha
  • 0.5 teaspoon cornstarch
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 inch fresh ginger, minced
  • 3 cloves garlic, minced
  • 1 teaspoon chili powder
  • Steamed rice
  • Tenderstem broccoli
  • Dry roasted peanuts, chopped
  • Lime wedges
  • Green onions, sliced

Instructions

  • Prepare the marinade by whisking together 2 tablespoons oil, Sriracha, cornstarch, soy sauce, honey, ginger, garlic, and chili powder. Add chicken and let it marinate for at least 30 minutes.
  • Cook the rice and steam broccoli as per package instructions. Keep warm.
  • Heat remaining oil in a skillet over medium-high heat. Once hot, sauté marinated chicken for about 5-10 minutes until golden and cooked through.
  • Pour reserved marinade into the skillet with chicken, simmer for 2 minutes until sauce thickens.
  • Serve spicy chicken over rice, topped with peanuts and green onions, alongside lime wedges and broccoli.

Notes

Adjust seasoning to taste for spice levels.
Marinade can be prepared a day in advance for deeper flavor.
