- 500 g chicken breast fillets
- 3 tablespoons vegetable oil
- 2 tablespoons Sriracha
- 0.5 teaspoon cornstarch
- 2 tablespoons soy sauce
- 1 tablespoon honey
- 1 inch fresh ginger, minced
- 3 cloves garlic, minced
- 1 teaspoon chili powder
- Steamed rice
- Tenderstem broccoli
- Dry roasted peanuts, chopped
- Lime wedges
- Green onions, sliced
Instructions
- Prepare the marinade by whisking together 2 tablespoons oil, Sriracha, cornstarch, soy sauce, honey, ginger, garlic, and chili powder. Add chicken and let it marinate for at least 30 minutes.
- Cook the rice and steam broccoli as per package instructions. Keep warm.
- Heat remaining oil in a skillet over medium-high heat. Once hot, sauté marinated chicken for about 5-10 minutes until golden and cooked through.
- Pour reserved marinade into the skillet with chicken, simmer for 2 minutes until sauce thickens.
- Serve spicy chicken over rice, topped with peanuts and green onions, alongside lime wedges and broccoli.
