- 4 cups shredded cooked chicken
- 2 cups instant rice
- 1 can (10.5 oz) cream of chicken soup
- 1 cup sour cream
- 1 cup frozen diced onion and bell pepper blend
- 1 can (10 oz) diced tomatoes with chilies
- 1.5 cups chicken broth
- 1 packet (1.12 oz) fajita seasoning
- 8 oz Mexican blend cheese, divided
Instructions
- Preheat the oven to 350°F and spray a 9×13 inch baking dish.
- Combine chicken, rice, cream of chicken soup, sour cream, onion and pepper blend, diced tomatoes, chicken broth, fajita seasoning, and 1 cup of cheese in a large bowl.
- Spread the mixture in the prepared baking dish and cover with foil. Bake for 35-45 minutes until rice is tender.
- Remove foil and sprinkle remaining cheese on top. Bake uncovered for another 3-5 minutes until cheese is melted.
- Let the casserole rest for 5 minutes before serving.
