Description

These Easy Confetti Cookies bring joy with their irresistible flavor and vibrant sprinkles. With a simple prep and delightful taste, they make the perfect snack for any occasion.


Ingredients

  • 13.25 oz white cake mix box
  • ½ cup unsalted butter (113 g), melted, slightly cooled
  • 2 large eggs
  • 5 tablespoons rainbow confetti sprinkles, plus more for rolling
  • 1 teaspoon pure vanilla extract, optional
  • ¼ teaspoon almond extract, optional

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, mix the dry cake mix, melted butter, eggs, and optional extracts until a thick dough forms.
  3. Gently fold in the rainbow sprinkles, being careful not to over-mix. The dough will be sticky and tacky.
  4. Let the dough rest uncovered for about 5 minutes until it thickens.
  5. Using a medium cookie scoop, portion out the dough.
  6. Roll each cookie ball in additional sprinkles, pressing gently to adhere them.
  7. Place the dough balls on the baking sheet with about 3 inches between each one and bake for 10-12 minutes, until the edges are set but the center is barely underdone.
  8. After baking, allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack.

Notes

Feel free to adjust the amount of sprinkles for a more festive look.
Optional extracts like vanilla and almond can enhance the flavor, but are not necessary.
For best results, avoid over-mixing the dough after adding sprinkles.
