- 13.25 oz white cake mix box
- ½ cup unsalted butter (113 g), melted, slightly cooled
- 2 large eggs
- 5 tablespoons rainbow confetti sprinkles, plus more for rolling
- 1 teaspoon pure vanilla extract, optional
- ¼ teaspoon almond extract, optional
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large bowl, mix the dry cake mix, melted butter, eggs, and optional extracts until a thick dough forms.
- Gently fold in the rainbow sprinkles, being careful not to over-mix. The dough will be sticky and tacky.
- Let the dough rest uncovered for about 5 minutes until it thickens.
- Using a medium cookie scoop, portion out the dough.
- Roll each cookie ball in additional sprinkles, pressing gently to adhere them.
- Place the dough balls on the baking sheet with about 3 inches between each one and bake for 10-12 minutes, until the edges are set but the center is barely underdone.
- After baking, allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack.
Notes
Feel free to adjust the amount of sprinkles for a more festive look.
Optional extracts like vanilla and almond can enhance the flavor, but are not necessary.
For best results, avoid over-mixing the dough after adding sprinkles.
