- 2 tablespoons olive oil
- 4 cups fresh spinach (about 120 g)
- 4 ounces feta cheese, crumbled (about 115 g)
- 2 cloves garlic, minced
- Salt & black pepper (to taste)
- 1 teaspoon red pepper flakes (optional)
Instructions
- Boil a pot of salted water; cook gnocchi until they float, about 2-3 minutes.
- Drain gnocchi and heat olive oil in a frying pan.
- Sear gnocchi on one side until golden brown, about 2-3 minutes, then flip and cook another 2-3 minutes.
- Add minced garlic to the pan; cook until fragrant, about 1 minute.
- Add fresh spinach and cook until wilted, about 2-3 minutes.
- Season with salt, pepper, and red pepper flakes; stir in feta cheese and serve.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days.
For freezing, keep in a freezer-safe container for up to 3 months.
