Description

This Easy Crispy Gnocchi With Spinach And Feta brings together the irresistible taste of crispy gnocchi, vibrant spinach, and creamy feta. It’s perfect for a quick yet delightful meal, combining comfort with ease for busy nights.


Ingredients

  • 1 pound gnocchi
  • 2 tablespoons olive oil
  • 4 cups fresh spinach (about 120 g)
  • 4 ounces feta cheese, crumbled (about 115 g)
  • 2 cloves garlic, minced
  • Salt & black pepper (to taste)
  • 1 teaspoon red pepper flakes (optional)

Instructions

  • Boil a pot of salted water; cook gnocchi until they float, about 2-3 minutes.
  • Drain gnocchi and heat olive oil in a frying pan.
  • Sear gnocchi on one side until golden brown, about 2-3 minutes, then flip and cook another 2-3 minutes.
  • Add minced garlic to the pan; cook until fragrant, about 1 minute.
  • Add fresh spinach and cook until wilted, about 2-3 minutes.
  • Season with salt, pepper, and red pepper flakes; stir in feta cheese and serve.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days.
For freezing, keep in a freezer-safe container for up to 3 months.
Reheat in a pan with olive oil to refresh the texture.
