Ingredients

  • 1 English cucumber
  • 1 teaspoon kosher salt
  • 12 ounces Campari tomatoes
  • 1/4 small red onion, peeled and thinly sliced
  • 3 tablespoons champagne vinegar, red wine vinegar, or cider vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • 1/3 cup chopped fresh dill
  • 1/2 teaspoon freshly ground black pepper

Instructions

  1. Slice the cucumber in half lengthwise and remove the seeds. Discard the seeds and cut the cucumber into thick half-moons.
  2. Place the cucumber slices in a large bowl and sprinkle with 1/2 teaspoon kosher salt. Let them sit for about 5 minutes to crisp and release moisture.
  3. After 5 minutes, discard any excess cucumber water. Add the sliced tomatoes and red onion to the bowl.
  4. Drizzle the mixture with vinegar, olive oil, honey, the remaining kosher salt, and black pepper. Toss gently to combine.
  5. Sprinkle the chopped dill over the salad and toss again. Serve chilled or at room temperature.

Notes

For added flavor, let the salad sit for a few minutes before serving to allow the flavors to meld.
Substitute basil for dill for a different herbaceous note if desired.
