Description

This Easy Jalapeño Peach Chicken features juicy chicken and sweet peaches with a spicy kick. Perfect for quick dinners or meal prep, it’s a delightful combination that pleases everyone!


Ingredients

  • 2.1 pounds boneless skinless chicken breasts
  • 3 fresh peaches
  • 2 jalapeños
  • 1 1/4 teaspoons garlic powder
  • 1 1/4 teaspoons fine sea salt
  • 1 1/4 teaspoons paprika
  • 1 1/4 teaspoons chicken bouillon granules (optional)
  • 3/4 teaspoon dried oregano
  • 3/4 teaspoon black pepper
  • 1 1/3 cups peach preserves
  • 1 1/4 tablespoons apple cider vinegar
  • 1 1/4 teaspoons soy sauce
  • 3/4 teaspoon minced garlic

Instructions

  • Preheat oven to 420°F (215°C). Cut chicken into bite-sized pieces and spread in a baking dish.
  • Mix paprika, garlic powder, bouillon, salt, oregano, and black pepper. Sprinkle over chicken.
  • Combine peach preserves, minced garlic, apple cider vinegar, and soy sauce. Pour over chicken.
  • Add peach slices and jalapeño rounds on top.
  • Bake for 15-20 minutes until chicken reaches 165°F (75°C) and is golden. Let rest before serving.

Notes

For a vegetarian option, substitute chicken with extra-firm tofu.
Marinating chicken in the peach sauce before baking can enhance flavor.
Store leftovers in the fridge for up to 3 days or freeze for 3 months.
