- 2.1 pounds boneless skinless chicken breasts
- 3 fresh peaches
- 2 jalapeños
- 1 1/4 teaspoons garlic powder
- 1 1/4 teaspoons fine sea salt
- 1 1/4 teaspoons paprika
- 1 1/4 teaspoons chicken bouillon granules (optional)
- 3/4 teaspoon dried oregano
- 3/4 teaspoon black pepper
- 1 1/3 cups peach preserves
- 1 1/4 tablespoons apple cider vinegar
- 1 1/4 teaspoons soy sauce
- 3/4 teaspoon minced garlic
Instructions
- Preheat oven to 420°F (215°C). Cut chicken into bite-sized pieces and spread in a baking dish.
- Mix paprika, garlic powder, bouillon, salt, oregano, and black pepper. Sprinkle over chicken.
- Combine peach preserves, minced garlic, apple cider vinegar, and soy sauce. Pour over chicken.
- Add peach slices and jalapeño rounds on top.
- Bake for 15-20 minutes until chicken reaches 165°F (75°C) and is golden. Let rest before serving.
Notes
For a vegetarian option, substitute chicken with extra-firm tofu.
Marinating chicken in the peach sauce before baking can enhance flavor.
