Description

Ingredients

  • Granulated Sugar (½ cup)
  • Brown Sugar (¼ cup)
  • Vegetable Oil (⅓ cup)
  • Pumpkin Puree (1 cup)
  • Large Eggs (2)
  • Pumpkin Pie Spice (2 teaspoons)
  • Salt (½ teaspoon)
  • Baking Soda (1 teaspoon)
  • Buttermilk (⅓ cup)
  • All-Purpose Flour (2 cups)
  • Granulated Sugar (2 tablespoons)
  • Ground Cinnamon (1 teaspoon)

Instructions

  • Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  • In a bowl, whisk together flour, baking soda, salt, pumpkin pie spice, and cinnamon.
  • In a separate bowl, mix granulated sugar, brown sugar, and oil until combined, then add pumpkin puree and eggs.
  • Gradually stir in buttermilk until smooth.
  • Fold the dry ingredients into the wet mixture until just combined.
  • Pour batter into prepared pan, sprinkle with sugar, and bake for 50-60 minutes until golden and a toothpick comes out clean.
  • Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

For a different flavor, substitute vegetable oil with melted coconut oil.
To achieve a lighter texture, ensure eggs and buttermilk are at room temperature before mixing.
If the top browns too quickly in the oven, loosely cover it with foil.
