Instructions
- Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
- In a bowl, whisk together flour, baking soda, salt, pumpkin pie spice, and cinnamon.
- In a separate bowl, mix granulated sugar, brown sugar, and oil until combined, then add pumpkin puree and eggs.
- Gradually stir in buttermilk until smooth.
- Fold the dry ingredients into the wet mixture until just combined.
- Pour batter into prepared pan, sprinkle with sugar, and bake for 50-60 minutes until golden and a toothpick comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
For a different flavor, substitute vegetable oil with melted coconut oil.
To achieve a lighter texture, ensure eggs and buttermilk are at room temperature before mixing.
If the top browns too quickly in the oven, loosely cover it with foil.
