This Elegant Graduation Cake with Fondant Cap Topper is a delicious treat that combines buttery yellow and chocolate cakes with vibrant frosting, perfect for celebrations. It’s simple to prepare and visually striking, making it ideal for any graduation event.

- 2 Yellow sheet cake
- 2 Chocolate sheet cake
- 1 Cotton candy cake
- 10 cups American buttercream frosting (Tinted yellow with gel food coloring)
- 4 cups Marshmallow fondant (2 cups of black and 2 cups of white)
- 1 batch Rice krispie treats (Can also use store-bought)
Instructions
- Bake 2 yellow sheet cakes and 2 chocolate sheet cakes in 9×13 inch dimensions and 1 cotton candy dome cake (5 inch diameter). Cool the cakes completely.
- Prepare the yellow buttercream frosting while the cakes cool.
- For the cap cake, place the dome cake on a suitable cake board. Frost it in buttercream and chill for 20 minutes. Roll out black fondant and cover the chilled cake. Smooth out and cut excess.
- Create the cap top using a square cardboard piece. Color edges with a black edible marker, add icing, and cover with black fondant.
- Cut a small circle of fondant, brush corn syrup on the cardboard, attach a ribbon, and then the fondant circle on top. Stick this on the dome cake with melted chocolate.
- Shape rice krispie treats into a cylinder, cover with buttercream, roll in white fondant, and cut excess. Affix white fondant circles on the ends with buttercream and wrap in a red ribbon.
- Assemble the cake by layering 2 chocolate and 2 yellow cakes with icing in between. Smooth icing on top and sides.
- Pipe roses around the cake edges using yellow icing and a piping bag fitted with a star tip. Position the diploma and cap on the cake with support.
- Cut out letters for 'Congratulations Class of 2024' and stick them on the cake board with buttercream.
Notes
For best flavor, chill the frosted cake before serving to allow the buttercream to set.
Use food coloring gel for a vibrant finish on the buttercream and fondant.
Store any leftover cake in an airtight container to maintain freshness.
