- 1 yellow onion, chopped
- 1/3 cup crumbled blue cheese
- 1/4 cup panko breadcrumbs

- 4 beef tenderloin, filet mignon steaks (~8 ounces each)

Instructions
- Preheat the oven to 450 degrees.
- Melt 2 tablespoons of butter in a large skillet over medium heat.
- Add the chopped onions and sauté for 3-4 minutes until they become translucent.
- Transfer the onions to a mixing bowl and allow them to cool for 2-3 minutes.
- In the bowl, mix in the blue cheese, panko breadcrumbs, kosher salt, and coarse ground black pepper.
- Gently mash the mixture with a fork until combined.
- In the same skillet, add 2 tablespoons of unsalted butter over high heat.
- Season the filet mignon steaks generously with the remaining kosher salt and black pepper.
- Sear the steaks for 3 minutes on each side until they are browned.
- Top each steak with the blue cheese mixture and place the skillet in the oven.
- Bake for 4 minutes for rare doneness, 5-6 for medium, or longer for well-done steaks.
- Let the steaks rest for 10 minutes, covered with foil, before serving.
