Description

This Filet Mignon with Blue Cheese Butter showcases tender beef topped with a rich blue cheese crust. It’s quick to prepare and perfect for a special dinner or an easy weeknight meal.


Ingredients

  • 2 tablespoons butter
  • 1 yellow onion, chopped
  • 1/3 cup crumbled blue cheese
  • 1/4 cup panko breadcrumbs
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon coarse ground black pepper
  • 2 tablespoons unsalted butter
  • 4 beef tenderloin, filet mignon steaks (~8 ounces each)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon coarse ground black pepper

Instructions

  • Preheat the oven to 450 degrees.
  • Melt 2 tablespoons of butter in a large skillet over medium heat.
  • Add the chopped onions and sauté for 3-4 minutes until they become translucent.
  • Transfer the onions to a mixing bowl and allow them to cool for 2-3 minutes.
  • In the bowl, mix in the blue cheese, panko breadcrumbs, kosher salt, and coarse ground black pepper.
  • Gently mash the mixture with a fork until combined.
  • In the same skillet, add 2 tablespoons of unsalted butter over high heat.
  • Season the filet mignon steaks generously with the remaining kosher salt and black pepper.
  • Sear the steaks for 3 minutes on each side until they are browned.
  • Top each steak with the blue cheese mixture and place the skillet in the oven.
  • Bake for 4 minutes for rare doneness, 5-6 for medium, or longer for well-done steaks.
  • Let the steaks rest for 10 minutes, covered with foil, before serving.

Notes

Let the steaks rest after baking to retain juices for a more flavorful bite.
Use fresh ingredients for the best flavor, especially with the blue cheese.
For a twist, add fresh herbs to the blue cheese mixture.
