Description

Flourless Protein Banana Oat Waffles are a delightful treat, perfect for busy mornings or a nourishing breakfast. With ripe bananas and oats, these waffles are simply scrumptious and easy to make at home.


Ingredients

  • 1 cup quick oats
  • 1/2 cup protein powder
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/4 tsp sea salt
  • 2 ripe bananas
  • 2 large eggs
  • 1/2 cup plain Greek yogurt
  • 2 tbsp avocado oil
  • 1/4 cup pure maple syrup
  • 1 tsp pure vanilla extract
  • 1/2 cup chocolate chips
  • 1/4 cup chopped pecans or walnuts

Instructions

  • Blend dry ingredients until fine flour forms.
  • Mash ripe bananas in a mixing bowl and mix in eggs, yogurt, oil, and vanilla.
  • Combine wet and dry ingredients, mixing gently to avoid overmixing.
  • Preheat waffle iron and spray with cooking spray.
  • Cook waffles in the waffle iron until golden brown, about 3 to 5 minutes.
  • Serve warm with toppings of choice.

Notes

For best texture, use very ripe bananas.
Store leftovers in an airtight container at room temperature for one day, or refrigerate for three days.
To reheat, toast in an oven at 350°F for 5-7 minutes.
