Description

Ingredients

  • 2 medium sweet potatoes, about 1 cup mashed
  • 1 1/3 cups almond butter
  • 1/2 cup maple syrup
  • 1/4 cup cocoa powder
  • 1/3 cup chopped chocolate or chocolate chips

Instructions

  • Preheat oven to 350°F and line an 8×8 baking dish with parchment paper.
  • Poke holes in sweet potatoes and microwave for about 6-7 minutes until soft.
  • Mash the cooked sweet potatoes until smooth, yielding about one cup.
  • In a bowl, whisk almond butter and maple syrup until combined.
  • Fold in cocoa powder and mashed sweet potatoes until just mixed.
  • Optionally add chopped chocolate or chocolate chips and fold gently.
