Ingredients

  • 1 tbsp olive oil
  • 1 small onion (chopped)
  • 1 clove garlic (minced)
  • 300g / 1 1/2 cups basmati rice
  • 1/2 tsp saffron threads
  • 500ml / 18 oz chicken stock
  • 1 tsp salt
  • Mint leaves (optional)
  • Pomegranate seeds (or barberries optional)

Instructions

  • Crush the saffron threads and steep in water for 5 minutes.
  • Heat olive oil in a pan and sauté chopped onion until translucent.
  • Add minced garlic and sauté briefly until fragrant.
  • Stir in basmati rice to coat and add salt and saffron-infused stock.
  • Bring to a simmer, cover, and cook for about 10 minutes.
  • Once cooked, steam off heat for another 10 minutes and fluff rice.
  • Serve garnished with pomegranate seeds and mint leaves.

Notes

Use high-quality saffron for the best flavor.
Rinse rice before cooking to reduce clumping.
Consider adding a pinch of turmeric for color and flavor.
