- 300g / 1 1/2 cups basmati rice
- 1/2 tsp saffron threads
- 500ml / 18 oz chicken stock
- 1 tsp salt
- Mint leaves (optional)
- Pomegranate seeds (or barberries optional)
Instructions
- Crush the saffron threads and steep in water for 5 minutes.
- Heat olive oil in a pan and sauté chopped onion until translucent.
- Add minced garlic and sauté briefly until fragrant.
- Stir in basmati rice to coat and add salt and saffron-infused stock.
- Bring to a simmer, cover, and cook for about 10 minutes.
- Once cooked, steam off heat for another 10 minutes and fluff rice.
- Serve garnished with pomegranate seeds and mint leaves.

Rinse rice before cooking to reduce clumping.
