Description

This Fresh Carrot Ribbon Salad offers an irresistible flavor with crunchy pistachios, fresh herbs, and a zesty dressing. Perfect for a quick, healthy meal!


Ingredients

  • 6 large carrots (about 1 pound)
  • 1/2 cup finely chopped pistachios
  • 2 tablespoons chopped dill
  • 2 tablespoons chopped parsley
  • 1 green onion (thinly sliced)
  • Extra herbs and chopped pistachios (for garnish)
  • 1/3 cup olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon apple cider vinegar (or champagne vinegar)
  • 2 teaspoons honey
  • 1 teaspoon Dijon mustard
  • 1 small clove garlic (grated)
  • Kosher salt and black pepper (to taste)

Instructions

  1. Wash and peel the carrots. Using a vegetable peeler, shave each carrot lengthwise into long, thin ribbons, and place them in a large bowl.
  2. In a small bowl or jar, whisk together olive oil, lemon juice, apple cider vinegar, honey, Dijon mustard, and grated garlic. Season with salt and pepper to taste. Whisk until smooth and emulsified.
  3. Pour the dressing over the carrot ribbons and toss gently to coat.
  4. Add chopped pistachios, dill, parsley, and green onion, and toss again until evenly distributed.
  5. Transfer to a serving platter. Garnish with extra herbs and chopped pistachios. Serve immediately or chill for 15–30 minutes to allow flavors to meld.

Notes

This salad can be made in advance and stored in the refrigerator for up to 2 days for best results.
Feel free to customize the herbs based on your preference or what you have on hand.
Adjust the sweetness of the dressing by adding more or less honey according to your taste.
