Instructions
- Cook the pasta in a large pot of water until al dente according to package instructions, reserving ½ cup of the pasta cooking water.
- In a large skillet, warm ½ teaspoon of olive oil over medium heat. Mix in the chopped walnuts and salt, cooking until golden, about 4 minutes. Remove and set aside.
- In the same skillet, add cream, diced gorgonzola cheese, and a few cracks of fresh black pepper. Bring to a gentle simmer, stirring until the cheese melts and the mixture is smooth (approximately 3-4 minutes). Turn off the heat.
- Drain the pasta and add it to the skillet, tossing to combine with the creamy sauce. If needed, add some reserved pasta water to achieve a velvety texture. Stir in half of the toasted walnuts and season with salt and pepper to taste.
- Serve immediately with a drizzle of extra virgin olive oil, garnish with remaining walnuts, fresh parsley, and some freshly grated parmesan cheese if desired. Enjoy warm.
