Description

These Graduation Cap & Diploma Sugar Cookies are a delightful blend of irresistible flavors and creative decoration. With simple ingredients like flour, butter, and white chocolate, they are perfect for celebrating special achievements and gatherings. Ingredients

  • 2 cups all purpose flour (plus more if needed)
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/2 cup butter (softened slightly)
  • 3/4 cups sugar
  • 1 large egg
  • 3/4 teaspoons pure vanilla extract
  • 1/2 teaspoon almond extract
  • 16 ounces white chocolate
  • 1/3 cup light corn syrup (plus more if needed)
  • food coloring (flesh tone and other color for your grad caps)

Instructions

  1. Preheat the oven to 350°F.
  2. Combine the flour, salt, and baking powder in a bowl and set aside.
  3. Cream the butter and sugar in a mixing bowl until light and fluffy.
  4. Mix in the egg, vanilla extract, and almond extract until well combined.
  5. Gradually add the dry ingredients and mix until just combined; add flour if sticky.
  6. Roll out the cookie dough on a floured surface to about 1/8 inch thick.
  7. Cut out twelve 3-inch circles and twelve diamond-shaped grad caps from the dough.
  8. Using the diamond cutter, create a notch in the circles.
  9. Brush two long edges of the diamond dough and press it into the circle's notch, sealing the edges.
  10. Bake for 10-14 minutes until edges are set and tops are dry.
  11. Let the cookies cool completely before decorating.
  12. Color a portion of white modeling chocolate with flesh tone and another with desired color.
  13. Roll out and cut circles from the flesh tone chocolate and diamond shapes from the colored chocolate.
  14. Brush corn syrup on each cookie, place the circle and diamond on top, pressing to seal.
  15. Make tassels from modeling chocolate, then attach them to the grad caps using corn syrup.

Notes

Ensure cookies are completely cooled before decorating to prevent melting the chocolate.
Adjust the amount of food coloring based on the desired vibrancy of the grad caps.
Use different shapes for the cookies to add variety.
