- 4 boneless, skinless chicken breasts
- 1/4 cup soy sauce
- 2 tablespoons olive oil
- 2 tablespoons honey
- 3 cloves of garlic, minced
- 1 teaspoon ground ginger
- 1 teaspoon pepper
- 1 ripe pineapple, peeled, cored, and cut into thick slices
- 1 tablespoon brown sugar
- 1 teaspoon cinnamon
- Fresh cilantro, chopped (optional)
- Lime wedges (optional)
Instructions
- Prepare the marinade by whisking soy sauce, olive oil, honey, garlic, ginger, and pepper together.
- Marinate the chicken in the mixture for at least 30 minutes.
- Preheat the grill to medium-high heat.
- Slice the pineapple and sprinkle with a mix of brown sugar and cinnamon.
- Grill the marinated chicken for 6-7 minutes per side until cooked through.
- Grill the pineapple for 3-4 minutes per side until caramelized.
Notes
Allow chicken and pineapple to cool before storing in airtight containers.
Reheat leftovers in the microwave or sear on a skillet for better flavor.
Serve warm and garnish with fresh cilantro and lime juice.
