Description

Ingredients

  • 2 pounds ground beef (90% lean)
  • Salt and pepper (to taste)
  • 3 tablespoons butter
  • 1/2 cup shallots (finely diced)
  • 10 ounces mushrooms (sliced)
  • 1 cup demi-glace
  • 1 cup heavy cream
  • 1 cup sour cream
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh parsley (chopped)

Instructions

  • Brown the ground beef in a skillet and season with salt and pepper until cooked through, then set aside.
  • Sauté shallots in butter until soft, then add mushrooms and cook until golden.
  • Add demi-glace to skillet, bring to a boil and then simmer for 10 minutes.
  • Stir in heavy cream, sour cream, and Dijon mustard, then return beef to skillet.
