- 3 medium russet potatoes peeled and 1/2-inch diced
- 1 pound lean ground beef
- 1 medium white onion diced
- 1 tablespoon vegetable oil
- 2 teaspoons minced garlic
- 1 tablespoon italian seasoning
- ½ teaspoon salt
- ½ teaspoon cracked black pepper
- 2½ cups freshly shredded sharp cheddar cheese
Instructions
- Place cubed potatoes in salted water and boil for 5–7 minutes until fork-tender. Drain and let steam-dry.
- In a large non-stick skillet over high heat, cook ground beef until browned. Drain excess fat and set aside.
- In the same skillet over medium heat, fry vegetable oil, onion, par-boiled potatoes, Italian seasoning, garlic, salt, and pepper for 5 minutes until potatoes are golden-brown and onions translucent.
- Add cooked beef back to skillet, stir to combine. Sprinkle cheese on top and stir until melted and cohesive.
- Remove from heat and serve hot.
Notes
Feel free to add your favorite vegetables for extra nutrition.
For added flavor, use smoked cheddar cheese instead of sharp cheddar.
Store leftovers in an airtight container in the fridge for up to 3 days.
